2 tsp. Olive Oil2 Boneless Chicken Breasts cut into strips3 tsp. Salsa4 Taco sized Flour Tortillas1 cup Cheddar Cheese shredded
Quesadilla de Pollo Picante
1. Saute the chicken strips in the olive oil for 3 minutes then add the salsa, saute until cooked through, approx. 2-4 minutes. Remove and reserve.
2. Wipe the pan clean and preheat.
3. Place the chicken mixture on one half of each of the 4 flour tortillas. Sprinkle with cheese and fold over to form a half circle.
4. Place a filled tortilla on the cooking surface. Cook until light brown. Turn. Repeat with the other three tortillas. Slice each tortilla into three wedges.
