16 Mission® Corn Tortilla Chip rounds
1/2 cup Granulated Sugar
1 Tbsp. Canela (Mexican Cinnamon) or Cinnamon
1 ripe Banana cut into 12 slices
1/2 cup chopped candied Pecans
4 Mint sprigs
Recipe Instructions:
1. Make Banana Pudding (see Below).
2. Combine sugar and cinnamon - place in sugar shaker and set aside.
3. To assemble:Place a dab of pudding in the center of each serving plate and top with one crisp tortilla round. Top each tortilla with a dollop of pudding and one slice of banana. Repeat layering twice more with tortillas, pudding and bananas, then top with a final tortilla round. Shake cinnamon sugar over top tortilla. Surround stack with candies pecans and 2-3 mint sprigs.
