4 cups Milk 2 cups Half and Half 8 Egg Yolks 1 1/2 cups Dark Brown Sugar 1/2 cup Cornstarch 2 oz. Butter 1 Tbsp. Vanilla Extract 1 Tbsp. Dark Rum 1/2 tsp. Nutmeg
1. Scald 4 cups milk and 1 cup half and half in saucepan. In a bowl, combine remaining 1 cup half and half with the yolks, brown sugar and cornstarch. Slowly whisk the hot milk mixture into the egg/sugar mixture, then pour all back into saucepan. Whisk over medium heat and bring mixture to a boil - reduce heat to low and continue whisking until mixture is thickened, 2-3 minutes. 2. Add butter, vanilla, rum and nutmeg to pudding and whisk to combine. Strain pudding through a sieve to remove any lumps. Cool completely.
