8 Mission® Soft Taco Size Flour Tortillas 2 cups cooked and diced Chicken (may be prepared earlier to save time) 1 can (4 oz.) chopped Chiles (reduce for milder version) 1 large Tomato seeded and diced 1 cup low fat Ricotta Cheese 4 Green Onions, chopped 2 Tbsp. minced Cilantro 1 cup Mission® Salsa 1 cup shredded low fat Mozzarella Cheese 1 cup shredded low fat Cheddar Cheese
1. In a bowl, combine chicken, Chiles, tomato, ricotta, green onions, cilantro. Salt & pepper to taste. Place tortillas on a flat surface and spread the filling equally down the center of each. Roll up tortillas tightly and place, seam side down, in a lightly greased 13x9-inch baking dish. Spoon salsa over tortillas and sprinkle cheese. Cover with foil and bake at 325 degrees F for 20 minutes. Remove foil and cook 5 to 10 minutes.
