Recipe Instructions:
1. Beat cream cheese and dressing mix at medium speed with an electric mixer until fluffy. Stir in green onions, green chiles, pimiento and olives.
2. Spread cream cheese mixture evenly over tortillas; roll up. Wrap each in plastic wrap, and chill 3 hours. Cut each diagonally into 10 slices. Garnish, if desired.
3. Variations:
A: Vegetable Rollups: Omit green chilies and pimiento. Stir in 1 celery rib, chopped; 1/2 cup chopped red bell pepper; and 1/2 cup chopped green bell pepper.
B: Mexican Rollups: Omit 1 package cream cheese, dressing mix, green chilies and pimiento. Stir in 2 cups (8 oz.) shredded sharp cheddar cheese and 1 (4 oz.) can diced jalapeño peppers, drained. Serve rollups with salsa.
