The chile guajillo is related to the pulla pepper. Shiny deep orange-red with some brown tones. Measures about 4" to 6" long and 1" to 11/2" across. Has a green tea and steamy flavor with berry tones; distinctive fruit and citrus qualities and thin fleshed. A little piney and tannic, it has a mild sweet heat. Commonly used in salsas, soups, stews, and chile sauces. Great accompaniment to all seafood, specially shrimp and scallops. Grown in northern and central Mexico.
