Tips for filling Chiles Rellenos
Fillings can be made ahead of time and refrigerated, then brought to room temperature before stuffing chiles.
Fillings should be at room temperature or slightly chilled. If fillings are hot, the juices will flow out and cause the coating to slide off.
Use enough filling to stuff each chile relleno as completely as possible, but not so much that the seam won't hold together.

These are my favorite chiles--(I, too, can not locally buy the 27 oz size of any chiles.) Most of the cans have very minimum seeds in the product, which I love because I cannot eat seeds so they are very easy for me to dispose of the seeds. I make an old family version of green chile frequently and I prefer alot more chile than meat and these large cans are the answer for me. Shipping packaging has improved somewhat but the delivering carriers can still create damage, regardless.Review for Embasa Whole Green Chiles - Mild
